History of the Restaurant in Perigord "In Perigord, cooking is a women's business" (Curnonsky) The restaurant la Vieille Auberge was founded at the end of the 19th century by Louise Boyer, the actual's owner's great-grand-mother. Back then, regulars, locals exclusively, would flow in during peasant fairs of village celebrations. Her daughter, Hélène Cérou, took over the business and developed it by preparing her own sausages (her white-wine sausages were known throughout the region). Following the rhythm of the seasons the cooking redolent of the soil "cuisine du terroir", inherited from her mother, was heated with wood fire in the "cantou" a large ingle-hook fireplace (stuffed ceps, pike with champagne). Nowadays, the fourth generation of woman chef is perpetuating the tradition of good taste and good living. |
